Zeus' blond

Neighbor Jesus (nicknamed Zeus) helped with this one. Due to the quaffability factor of a blonde ale, this was the quickest disappearing beer I've ever made. Gone in 3 days. Word spreads quickly around the neighborhood.

Type: Extract w/grain Size: 5 gallons
Color:
8 HCU (~6 SRM)
Bitterness: 30 IBU
OG: 1.050 FG: 1.010
Alcohol: 5.2% v/v (4.1% w/w)
Grain: 1 lb. Wheat malt
0.5 lb. American crystal 10L
1 lb. Dextrine malt (Cara-Pils)
0.5 lb. Rolled oats
Steep: 1.25 qts per pound.
125°F for 30 min.
150°F for 30 min.
Rinsed in colander with 1.5 qts per pound 175°F water.
Boil: 45 minutes SG 1.042 6 gallons
4 lb. 10 oz. Light dry malt extract
Irish moss at 15 min. To keep lighter color, add 1/2 DME at start and 1/2 with 15 minutes left. May have added to a slightly more bitter beer than noted.
Hops: 1 oz. Santiam (6.5% AA, 45 min.)
.25 oz. Santiam (6.5% AA, 30 min.)
.25 oz. Santiam (6.5% AA, 15 min.)
Yeast: WL001. 1L starter.
Log: Allowed to sit in kitchen for 1st day @78°F. Put into cooler second day @ 72°F. Racked day 7. Temp was 66°F in secondary. Bottled after day 19. Actual OG 1.050, FG 1.007. Took a long time to clear - could probably use some gelatin to clear out in such a light colored beer.
Carbonation: 3/4 cup priming sugar. Took 4+ weeks to carbonate - after rousing yeast. Yeast was fairly slow to work - fermentation as well as carbonation.
Tasting: With such delicate beers as a blonde, must watch sanitation and fermentation closely as any defects will show through. I detected hints of phenolics (sanitation/wild yeast) and a little too much fruitiness (too high temp at start). Nice honey background from light crystal malts and will use Santiam again - a very nice hop. Definitely a good beer for the masses as I only got to have 4 bottles of this batch - the others being quickly consumed by BMC drinkers. A good party beer. Will make again and try to keep ferment temps down in the 60's the whole time.
