Victory Cream Ale

A brew conceived and created during the Independence Day weekend of
1999... Wonderful copper color, malty and round up front, and
pleasant lingering bitterness to finish. Due to the moderately high ETOH content, this is not a lawn mower beer!

Type: Extract w/grain Size: 6 gallons
Color:
11 HCU (~8 SRM)
Bitterness: 12 IBU
OG: 1.059 FG: 1.012
Alcohol: 6.1% v/v (4.8% w/w)
Water: Hard tap water, charcoal filtered to remove chlorine.
Grain: 0.5 lb. American victory
Steep: Grain added to cool water and slowly brought to beginning of boil and removed. Sparge with 2 quarts of H2O.
Boil: 60 minutes SG 1.119 3 gallons
4.91 lb. Light malt extract
3.72 lb. Light dry malt extract
Irish Moss last 5 minutes
Hops: 0.5 oz. Perle (8% AA, 60 min.)
.5 oz. Tettnanger (4.5% AA, 15 min.)
.5 oz. Perle (8% AA, 15 min.)
.5 oz. Tettnanger (aroma)
Yeast: Wyeast Trappist Ale
Carbonation: 2.7 volumes Dried Malt Extract: 9.51 oz. for 5.5 gallons @ 70°F
