Old No. 40

We aimed for a beer with a hoppy character, I think we donged this one.

Beer: Old No. 40 Style: India Pale Ale
Type: Extract w/grain Size: 5.5 gallons
Color:
13 HCU (~9 SRM)
Bitterness: 105 IBU
OG: 1.060 FG: 1.010
Alcohol: 6.5% v/v (5.1% w/w)
Water: Boil all water before adding any ingredients
(distilled crystal spring water was used)
Grain: 1 lb. American 2-row
1 lb. American crystal 20L
.5 lb. American crystal 40L
Steep: All grians were placed in a grain bag
Boil: 60 minutes SG 1.051 6.5 gallons
4 lb. Light malt extract
4 lb. Wheat extract
Remove wort from heat and stir in extracts. Bring to a boil and follow the hop schedule,add 1/2 tsp. of irish moss at the 45th min.
Hops: 2 oz. Chinook (12% AA, 60 min.)
.5 oz. Cascade (6% AA, 45 min.)
.5 oz. Cascade (6% AA, 30 min.)
.5 oz. Cascade (6% AA, 15 min.)
2 oz. Centennial (aroma)
Yeast: American Ale 1056 (wyeast)
Log: Brewed April 27
Primary for 12 dAYS
secondary for 12 days,added 2oz. dry hops (centennial)
and sat in the bottle for 6 days (refridgerated)
Carbonation: 1 cup brown sugar
Tasting: going,going,gone........
We think it's one of our favorites, its unique in flavor and has a hoppy snap, dry-hopping truely is a must
The next batch will be even hoppier, with cascade as our dry hop.Also we will cut down the bittering and pull for more aroma.The alc. will raised slightly and will be kegged so it can truely be appreiciated.
