FOR THOSE WHO ENJOY AN IPA WITH A BALANCED
BITTERSWEET ASSERTIVENESS, TRY ZIGER IPA.
IT IS EASY TO BREW AND TASTE SUPERIOR TO
MANY IPA I HAVE TRIED.

15 HCU (~9 SRM)
Bitterness: 35 IBU
OG: 1.055 FG: 1.014
Alcohol: 5.3% v/v (4.2% w/w)
Water: USED BOTTLED SPRING WATER WITH 2 TSP OF GYPSUM
Grain: .75 lb. American crystal 40L
.5 lb. Dextrine malt (Cara-Pils)
Steep: CRACKED AND PLACED ALL GRAINS (INCLUDING CARA PILS)IN SOCK.
PLACED IN COOL WATER AND SLOWLY BROUGHT TEMPERATURE UP
TO JUST UNDER BOILING 210 DEGREES. REMOVED GRAINS.
Boil: 60 minutes SG 1.138 2 gallons
7 lb. Light malt extract
2 TSP OF GYPSUM, CHINOOK & NORTHERN BREWERS HOPS WERE ADDED AT START OF BOIL. ADDED STERILIZED OAK CHIPS AT 30 MINUTES FOR IPA AUTHENTICITY. IRISH MOSS ADDED LAST 10 MINUTES.
FINISHED WITH CASCADE HOPS LAST MINUTE WITH LID TO HOLD IN AROMAS.
Hops: 1 oz. Chinook (12% AA, 60 min.)
1 oz. Northern Brewer (8.5% AA, 60 min.)
1 oz. Cascade (aroma)
Yeast: LARGE COOPERS ALE YEAST. QUICK & EASY
Log: BREWED ON NOVEMBER 17, 2001. BOTTLED 1 WEEK LATER. AGED 5-6 WEEKS.
Tasting: TRIED FIRST BOTTLE AT CHRISTMAS. FANTASTIC. BITTER BUT GREAT BALANCE AND THE OAK GAVE IT A SPECIAL TOUCH OF FLAVOR & AROMA. CANNOT KEEP MY FRIENDS OUT OF MY STASH. TRIED A "LOST" BOTTLE ON APRIL 15 AND IT WAS JUST AS GOOD.
