1.5 quarts water per lb grain. (4.4 gal) Mash at 153°F x 60 min. Sparge with 4 gallons at 170°F. |

Yeast: | Safale S-04 11 gram packet. A moderately attenuative, well flocculating traditional British ale strain. Pitched directly to wort with no rehydration. |

Log: | Brewed May 3. Actual yield to fermentor was about 4 gallons--hops absorbed a lot of wort. Oxygenated with 20 second blast from a "diffusion stone wand". Glass primary for 15 days. Racked to glass secondary May 18 with cascade pellets. Condition for two weeks. Fermentation temperatures around 63°F. |

Carbonation: | 2.8 volumes | Keg: 30.5 psi @ 65°F | ||||||
Tasting: | May 18: Out of primary, it had a strong alcohol kick and seemed drier than expected. July 18: Alcohol kick has subsided. Much smoother and malty tasting -- more balanced. Cascade aroma hops are assertive. Bitterness perceived is toward low end for the style. August 12: Hops are fading somwhat. Maltiness is slightly diminished. Still smells and tastes great. Best beer I've made so far. |
