Old Chap IPA

My attempt at a semi-classic IPA from back in the day. All noble hops
ensure that the citrus character common in American IPA's does NOT appear in my beer...

Beer: Old Chap IPA Style: India Pale Ale
Type: Partial mash Size: 10 gallons
Color:
28 HCU (~15 SRM)
Bitterness: 50 IBU
OG: 1.074 FG: 1.015
Alcohol: 7.6% v/v (6.0% w/w)
Water: After receiving a water report from my water supply, i will do my best to recreat the water from Buron on Trent
Grain: 8 lb. British pale
1 lb. Wheat malt
1.5 lb. Belgian biscuit
2.5 lb. American crystal 60L
1 lb. Dextrine malt (Cara-Pils)
Mash: 65% efficiency
Partial mash... 155degrees
Boil: 90 minutes SG 1.062 12 gallons
11 lb. Light malt extract
will add Irish moss at 15
Hops: 2 oz. Target (10.9% AA, 60 min.)
2 oz. Fuggles (4.75% AA, 20 min.)
1 oz. Kent Goldings (5% AA, 15 min.)
1 oz. Fuggles (4.75% AA, 5 min.)
1 oz. Kent Goldings (5% AA, 5 min.)
1 oz. Kent Goldings (aroma)
Yeast: Will split the batch, 1/2 pitched with Re-used white Labs burton yeast, half pitched with a 1/2 gallon starter of White Labs 013 London ale (equivalent to WYEAST 1028)
Carbonation: Force carbonated at 38* with 10Lbs pressure
