Bitterness: 66 IBU
OG: 1.052 FG: 1.015
Alcohol: 4.8% v/v (3.8% w/w)
Water: All water is RO with brewing salts from Brewers Connection.
Grain: 19 lb. Cargill American 2-row
.5 lb. Belgian Wheat malt
2.5 lb. Belgian Munich
.5 lb. American crystal 40L
1 lb. Malanoidin malt
Mash: 75% efficiency
Mash in at 165°F to rest at 153°-155°F for 1 hour, until conversion with RIMS system. Raise to 169°F to mash out.
Boil: 60 minutes SG 1.042 15 gallons
1 tsp. Irish Moss last 15 min. of boil.
Hops: 2 oz. Northern Brewer (whole) (7.9% AA, 60 min.)
1 oz. Citra (pellet) (11.1% AA, 45 min.)
1 oz. Citra (pellet) (11.1% AA, 30 min.)
1 oz. Citra (pellet) (11.1% AA, 15 min.)
1 oz. Citra (pellet) (aroma)
Yeast: 900 ml. starter of White Labs WLP051 California V Ale Yeast from stir plate.
Log: Ferment in water bath to hit 65°-70°F
