Ivresse En Extase

I'll be brewing this one on 01/20/02. Maybe a better name for it would be EVERYTHING BUT THE KITCHEN SINK. It should have LOTS of body as alot of unfermentables will be generated with the specialty grains. I will keep you posted on how it evolves.

Type: Partial mash Size: 45 liters
Color:
60 HCU (~25 SRM)
Bitterness: 31 IBU
OG: 1.088 FG: 1.017
Alcohol: 9.2% v/v (7.2% w/w)
Grain: 680g Wheat malt
680g Belgian aromatic
450g Belgian biscuit
340g Dextrine malt (Cara-Pils)
225g Belgian CaraMunich
340g Belgian CaraVienne
680g Belgian Special B
Mash: 65% efficiency
Bring water to 170F and steep grains in a grain bag for 30 minutes keeping the temperature between 155 and 165.
Boil: 60 minutes SG 1.199 20 liters
4.6kg Light malt extract
2.7kg Amber malt extract
1.35kg Dark malt extract
0.9kg Belgian candi sugar
0.9kg Honey
Irish moss after 45 minutes.
Yeast nutrient (1tsp) added after 45 minutes.
Hops: 84g Styrian Goldings (5.5% AA, 60 min.)
28g Styrian Goldings (5.5% AA, 45 min.)
28g Hallertauer Hersbrucker (5% AA, 30 min.)
28g Styrian Goldings (5.5% AA, 30 min.)
28g Hallertauer Hersbrucker (5% AA, 15 min.)
28g Saaz (aroma)
Yeast: Wyeast 1388 Belgium strong with gallon starter.
