Bitterness: 26 IBU
OG: 1.072 FG: 1.005
Alcohol: 8.6% v/v (6.8% w/w)
Grain: 10 lb. Belgian Pilsner
Mash: 80% efficiency
Step mash: Mash in 125°F > 45 min @ 144°F > 30 min @ 158°F > mashout @ 172°F. Or, if you'd like to keep things simple, do a single infusion mash @ 145°F for 60 min. Sparge @ 168°-172°F.
Boil: 60 minutes SG 1.058 6.5 gallons
1.75 lb. Cane sugar
Add small amount (i.e. 1/2 tsp) yeast nutrient to kettle during the boil. 1 Whirlfloc tab @ 15 minutes. Add sugar @ 15 minutes. Add 1 Whirlfloc tab @ 15 minutes. Add Coriander (12g/5gal) @ 10 minutes, Ginger (4g/5gal) @ 10 minutes, and seeds of paradise (4g/5gal) @ 10 minutes.
Hops: 2 oz. Saaz (3% AA, 60 min.)
1 oz. Styrian Goldings (4.9% AA, 15 min.)
Yeast: Culture yeast from bottle of Delirium Tremens and step up at least 3 times before pitching.
Carbonation: 3.0 vol's of CO2
