Water: | Start grain rest at 155º for 30 minutes. | |||||||
Grain: | 8 oz. American crystal 20L | |||||||
Steep: | Steep wart for 30 minutes and spauge with hot water after 30 minutes and discard spent grains. Bring wart level to 2.5 gallons before boiling. | |||||||
Boil: | 60 minutes | SG 1.103 | 2.5 gallons | |||||
5 lb. 8 oz. Light malt extract 1 lb. Cane sugar |

After steeping, add extract, sugar, bitter hops (Galena and Hallertauer), and bring to a boil for 60 minutes. 10 minutes left in the boil add 1/4 teaspoon of Irish Moss. Cool wart and add to carboy filled with enough water to have 5 gallons of wart. Bring temp down to 70 degrees before adding yeast. | ||||||||

Yeast: | Use a highly attenuating healthy culture of English style yeast. I recommend Dry English Ail Yest (White Lab WLP007) This has the higher attenuation you need for this type of beer. | |||||||
Log: | After original fermentation stops, transfer to secondary fermentation container and dry hop (Styrian Goldings) at a temperature below 55º for two weeks. | |||||||
Carbonation: | Carbonate with 1/2 pound of priming sugar. If you like you can also add a dose of Brettanomyces yeast at bottleing if you'd like. |
