Boil the first 20 min with the Brown Sugar & no hops Then follow bittering schedule |

Yeast: | WLP 500 Trappist Ale or Wyeast 3864 Aerate EXTREMELY well. Ferment 72 F. Hotter if you prefer more of the Monk Funk. |

Log: | Rack to secondary. Condition longer than usual. |

Carbonation: | Save some and bottle condition for 1 year for a treat. Otherwise, keg and force carbonate for instant pleasure. |

Tasting: | Add an extra 1/4 pound Special B for more caramel/raisin taste. Can substitute Vanguard hops (Swiss) for bittering. Also Vanguard Leaf for aroma, although not exactly true to this beer or style. Saaz is also good in this beer. |
