Tasting: | Wonderful example of a Belgian triple but not quite the Canadian/Belgian flavor profiles without their yeast strain, closer to Chimay. I've done variations on this recipe 3 times now all are excellent. My European friends all love it and it gets consistantly better with more complex flavor notes as it ages. The longest I've been able to keep bottles around is 18 months. |
