White summer

I'm constantly serching for the perfect Wit beer. This is the third rendition of this recipe. Hopefully this time I'll get it.

Beer: White summer Style: Belgian White (Wit)
Type: Partial mash Size: 21 liters
Color:
2 HCU (~2 SRM)
Bitterness: 12 IBU
OG: 1.050 FG: 1.012
Alcohol: 4.9% v/v (3.8% w/w)
Grain: 1kg Belgian Pilsner
1kg Flaked wheat
Mash: 65% efficiency
62°c 40min, 70°c 20min
Boil: 60 minutes SG 1.079 13.2 liters
1kg Light malt extract
1kg Honey
Add saaz at begining of boil. Add 28g bitter orange, 56g crushed coriander seeds and 14g grains of paradice with 15 min left. Add 1 tsp irish moss and Hallertauer with 5 min left.
Hops: 28.4g Saaz (3.75% AA, 60 min.)
28g Hallertauer (4.25% AA, 5 min.)
Yeast: WLP400 Belgian Wit Ale Yeast
Carbonation: 2.8 volumes Corn Sugar: 166g for 21 liters @ 21°C
