152F for 60 minutes. Batch sparge with 3 gallons for 60 min. added 1.2 gallons to raise to 168F, drained then added 3 more gallons at 168F, mixed and let sit for 10 min. then drained again to collect 6 gallons. | ||||||||

Tasting: | After 3-4 weeks in bottle, it was very hot and fusel-ly. Left alone for 2 more months and mellowed wonderfully and hitting peak at 5 months. Malty and a little toasty w/ some raisin ester notes - very smooth tasting. Clean from using WL029 yeast - not "cellar-like" as guidelines call for but most of the commercial examples (Jenlain in particular) I've tasted are fairly clean of which this is quite comparible. Will make again |
