I've been planning my first Saison for 2 years... it's long overdue!

Bitterness: 23 IBU
OG: 1.045 FG: 1.002
Alcohol: 5.5% v/v (4.4% w/w)
Grain: 4.78 lb. American 2-row
0.80 lb. German Munich
1.59 lb. Flaked rye
0.80 lb. Flaked wheat
Mash: 85% efficiency
R.O. water with a modest addition of chalk and gypsum.
Boil: 60 minutes SG 1.033 7.5 gallons
Skipping the Whirfloc on this one -- I don't fear the haze.
Hops: .5 oz. Northern Brewer (8.5% AA, 60 min.)
1 oz. Styrian Goldings (5.5% AA, 10 min.)
1 oz. Styrian Goldings (5.5% AA, 0 min.)
Yeast: WY3711, no starter.
