Getting back in the brew saddle after 2 years. Brewed this as a summertime quencher.

Log: | Ferment at 68 deg. for 5 days. Rack to secondary, ferment for 6 days. | |||||||
Carbonation: | 2.7 volumes | Corn Sugar: 4.72 oz. for 4.75 gallons @ 69°F | ||||||
Tasting: | Tried first bottle after 7 days, carbonation hadn't developed enough. Waited another 5 days and tried second, carbonation improved. Nice clean beer, good crispness (due to the type of yeast used, I'm guessing.) Some residual sweetness from priming sugar that should go away in a few weeks. All in all, a success. |
