Klink's Kolsch

This is my first brew that i designed and only my second batch overall. I based it off some information i received from a brew pub and also from recipes i saw on the web. Let me know if you have any hints for me The DME was actually the extra light. The beer looks pretty dark in the secondary fermenter, but should be lighter in the bottle.

Type: Extract w/grain Size: 5 gallons
Color:
10 HCU (~7 SRM)
Bitterness: 15 IBU
OG: 1.055 FG: -
Alcohol: -
Water: I use distilled water because I am on a well. I add 1-2 teaspoons of gypsum to the boil
Grain: 1.5 lb. German Munich
.5 lb. Dextrine malt (Cara-Pils)
Steep: I steeped the grains at 150 ° for 20-25 minutes.
Boil: 60 minutes SG 1.138 2 gallons
5.5 lb. Light dry malt extract
Irish moss was used at 45 minute mark and gypsum was added at the boil
Hops: 1.5 oz. Hallertauer (4.25% AA, 60 min.)
1.5 oz. Hallertauer (4.25% AA, 15 min.)
Yeast: I used a liquid kolsch yeast
Log: Brewed 3/16/03, about 5 days in primary fermenter, then 2 weeks in a secondary fermenter in a dark very cool area. Bottle and let condition at 55 ° for about 3 weeks.
Carbonation: 3.5 volumes Dried Malt Extract: 12.0 oz. for 5 gallons @ 65°F
I will prime with 1.5 cups of DME.
