Steep: | Pour 1 gallon of water into a pot separate from your boling pot. Place crystal and cara-pils in a muslin bag and place into water. Bring the temperature slowly up to 180F. Remove grains when temperature hits 180F and place in a strainer over your boiling pot. Slowly pour steeping water over grains into boiling pot to get any remaining goodies. | |||||||

Add 1 gallon to the "tea" made from steeping the specialty grains bring the boil volume up to 2 gallons and bring to a boil. Remove from heat and add malt extracts. Put boiling pot back on heat and bring back to boil. Add 1 tsp Irish Moss during last 15 minutes of boil. |

Carbonation: | 3/4 cup corn sugar boiled in 2 cups water for 15 minutes then cooled at bottling time. |
