Mash: 65% efficiency
mash in 7.5 gal. @156 deg.for 60 min. sparge with 7 gal.
Boil: 60 minutes SG 1.047 12 gallons
2 tsp irish Moss, 1 oz. Coriander, 2oz. bitter orange peel all added for final 15 min.
Hops: 1 oz. Centennial (9.2% AA, 60 min.)
1 oz. Kent Goldings (5.7% AA, 45 min.)
1 oz. Kent Goldings (5.7% AA, 30 min.)
1.5 oz. Kent Goldings (5.7% AA, 15 min.)
1 oz. Centennial (aroma)
Yeast: Split batch one using Edme dry and the other using Danstar Windsor.
Log: Dry Hop with 1 oz. Kent Goldings per 5 gal batch for 2 weeks.
