Spy Pond Pale Ale

This is going to be a really nice summertime pale ale. I haven't used Williamette before so I look forward to tasting this. I am also looking forward to results from the Wyest #1318 London III yeast. Some nice fruity tones should go nice with the Williamette.

Bitterness: 31 IBU

Alcohol: -
Water: 1 tsp gypsum per 5 gallons of water
Grain: 8 lb. Beeston Maris Otter
1 lb. Wheat Malt
8 oz. DWC Biscuit
8 oz. Dextrine Malt (Cara-Pils)
Mash: 75% efficiency
11 qts of water at 168°F, stir in grains
Sugar-rest: 152-3°F for 60 minutes
Mash-out: 168°F for 10 minutes
Sparge: 170°F for 45 minutes (5 gallons of water)
Boil: 90 minutes SG 1.043 6.5 gallons
1 tsp Irish moss (15 min)
Hops: 1 oz. Williamette (flower) (4.5% AA, 60 min.)
.5 oz. Williamette (flower) (4.5% AA, 40 min.)
.5 oz. Williamette (flower) (4.5% AA, 20 min.)
.5 oz. Williamette (flower) (4.5% AA, 10 min.)
.5 oz. Williamette (flower/dry-hop) (aroma)
Yeast: Wyeast London Ale #1318 (1L starter)
Carbonation: 3/4 cup corn sugar
