Honey Pricked Pale Ale

My In-Law's have a patient who brings them honey from his hives on a yearly basis. This year it was wild cactus honey. Decided to use this honey in a couple of recipes, this being the first.

Beer: Honey Pricked Pale Ale Style: American Pale Ale
Type: Extract w/grain Size: 5.5 gallons
Color:
9 HCU (~6 SRM)
Bitterness: 33 IBU
OG: 1.056 FG: 1.012
Alcohol: 5.7% v/v (4.5% w/w)
Grain: .5 lb. American crystal 10L
Steep: 30 minutes in 150°F water using nylon grain bag.
Boil: 60 minutes SG 1.123 2.5 gallons
7 lb. Light malt extract
1 lb. Honey
1 tsp rehydrated Irish Moss, 15 min.
Hops: 2.0 oz. Centennial (8.8% AA, 60 min.)
1 oz. Cascade (5% AA, 30 min.)
.5 oz. Cascade (5% AA, 15 min.)
Yeast: 1056 Wyeast American Ale
Log: This one is a beaut, so far! In its secondary, lovely Cascade nose and clearly really well. Golden honey color.
1/4 tsp Isinglass added to keg
1/2 oz. Cascade hops added to keg
Carbonation: 2.8 volumes Keg: 18.4 psi @ 45°F
