Log: | Brewing notes: Mased at 153F for 4 hours. Sparged to collect 7 gallons of runoff. Added honey during last 2 minutes of boil. Pitched 1 pint of 1272 yeast slurry from Bass clone. Active fermentation 8 hours after pitching Moved from primary to secondary after 10 days. Kegged 9/5/01 beer looked very clear coming out of secondary FG was 1.012 so there was a little residual sweetness. Seems to be balanced okay with the hop bitterness. Should be able to try by the weekend. |

Tasting: | This has matured nicely after about two weeks in the keg. Really comes to life when served 50-55F. Would use more honey and maybe 4 ounces of chocolate next time. |
