Red Hawk

This is a very simple but tastey pale ale. It was my first recipe and I continue to use it (and it's variants) 8 years later. It is based on a recipe I recieved from an excellent brewer (and better friend) Rob Bates of the 'Reno Homebrewer'.

Beer: Red Hawk Style: American Pale Ale
Type: Extract w/grain Size: 10 gallons
Color:
44 HCU (~20 SRM)
Bitterness: 29 IBU
OG: 1.072 FG: 1.016
Alcohol: 7.2% v/v (5.7% w/w)
Water: Any pleasant tasteing water seems to work.
Grain: 2 lb. American crystal 60L
2 lb. Belgian CaraMunich
Steep: I steep the grains at ~ 152° for ~20 minutes, then raise the temp. to ~ 158° for another 20 minutes.
Boil: 60 minutes SG 1.090 8 gallons
10 lb. Light malt extract
8 lb. Amber malt extract
8 oz. Lactose
I've been adding ~ 1TBSP. Irish Moss about 30 minutes into the boil. This recipe seems to produce a lot of precipitate.
Hops: 4 oz. Willamette (5.5% AA, 60 min.)
4 oz. Cascade (aroma)
Yeast: I now like to use the pitchable WLP001 (California Ale Yeast) from White Labs to get off to a good start. I made a pint of starter the day before brewing for this size batch(10 gal).
Log: I made a chilling coil with a roll of 3/8 copper tube and some tubeing and hose fittings. It shaves quite a bit of time off of the cooling process and I worry less about contamination.
Carbonation: I like to use corn sugar (3/4 cup to 5gal.) but sometimes I'll keg it.
Tasting: I threw about 8 oz. of lactose in the wort this time. Will see how I like it. I like to think this comes out similar to "Red Seal" or "Red Nectar" (two of my favorites). See what you think! Then let me know if you can make it better.
