This fruit Ale is great in the summer time on hot days in July.

Steep: | Steep grains @ 155°F for 30 minutes. | |||||||

Yeast: | Starter preferred, but not necessary. White Labs - Australian Ale Yeast (WLP009) | |||||||
Log: | You will also need 9lbs. of berries. Use Blueberries, Rasperries, and Blackberries or Elerberries. 7 Days in primary. Pasteurize fruit in 150°F H2O for 20 minutes, adding just enough H20 to cover the tops of the berries. Pulverize fruit and add to secondary, ferment for 10-14 days. (Optional: add steeping water to secondary for extra aroma.) Rack to tertiary for 2-3 days for further clearing. Bottle and age for 10 days. | |||||||
