Goin' to California Pale Ale
This is my first all grain beer. Thought I would try something simple
so I could concentrate on the mashing process.

Single step infusion mash. 11 quarts of 165° water plus a little cold water to get a strike temp of 154° for 90 min. Sparge with 175° water to get 6 gallons. | ||||||||
Boil: | 60 minutes | SG 1.036 | 6 gallons | |||||
Hops: | .5 oz. Cascade (5.5% AA, 45 min.) .5 oz. Target (10% AA, 45 min.) 1.5 oz. Cascade (5.5% AA, 15 min.) 2 oz. Cascade (aroma) |

Yeast: | White Labs California Ale WLP001 - Pitch at 74° and move to 68° when fermentation began. |

Log: | Brewed 5/4/2002 Ferment at 68°. Ferment in primary for 5 days. Rack to secondary and ferment for 7 days. |

Carbonation: | 2.6 volumes | Corn Sugar: 4.80 oz. for 5 gallons @ 72°F | ||||||
Tasting: | Well the hops are right up front. Thought this would be similar to Sierra Nevada PA, but it turned out to be more along the lines of Anchor Liberty Ale. I was suprised at the huge increase in the quality over my extract brews. May never go back to the extract. |
