"Celebration" Pale Ale

This was originally going to be a SN Celebration clone but my starting gravity was too low. Instead of adding DME to the boil I simply lowered my original hop table and came up with this pale ale. It should be tasty!

Type: All grain Size: 5.5 gallons
Color:
16 HCU (~10 SRM)
Bitterness: 25 IBU
OG: 1.058 FG: 1.012
Alcohol: 6.0% v/v (4.7% w/w)
Grain: 11.5 lb. British pale
.6 lb. Dextrine malt (Cara-Pils)
1.1 lb. British crystal 50-60L
Mash: 65% efficiency
Protein rest @ 126 degrees for 20 min.
Added boiling water to bring to 151 degrees
Held for 70 mins.
Sparged normally at 170 degrees.
Boil: 75 minutes SG 1.046 7 gallons
Next time I will boil for 90 mins to reach a little higher gravity, but no worries here.
Hops: 10g Chinook (10.7% AA, 60 min.)
12g Cascade (6.3% AA, 45 min.)
5g Cascade (6.3% AA, 15 min.)
5g Centennial (9% AA, 15 min.)
8g Cascade (aroma)
12g Centennial (aroma)
Yeast: American 1056 Ale Yeast
Log: Primary for 9 days @ 67 degrees
Secondary for 10 days @ 65 degrees
Kegged and let age for 2 weeks @ 60 degrees
Hopefully will be ready for Christmas 2002
Carbonation: Forced carbonation in keg
Tasting: Tasted when transfer to secondary. Hops evident but not overpowering. Definite alcohol present but a nice balance with a little malty sweetness (this should lessen with age). I am hoping that the hops will be more apparent after dry hopping in secondary. I will keep you posted.
