Autumn Coriander Honey Ale
Autumn Coriander Ale is a light bodied pale ale with a generous amount of citrus flavors derived from Hallertau hops, dried orange peel and coriander.

Mash: | 80% efficiency | |||||||
Dough in with 16 quarts of water @~120°F Acid rest a 110°F for 20 min. Apply heat, add two quarts water and rest @124°F for ~30 min. Pull 3.5 Gallon Decoct. Heat Decoct to 154°F and rest for 15 min. Boil Decoct for 30 min. Return Decoct to Mash and equilibrate at 151°F. Maintain 147-150 for 20 min. Raise mash to 158°F. and hold for 30 min. Raise heat to 165°F and mash out for 15 min. Sparge and collect approximately 7 Gallons. |

Add 4 Gallons Water and 4lbs. Honey and bring to a boil. 1.25oz Hallertau 4.8% AAU for 60 min 0.75oz Hallertau 4.8% AAU for 15 min 2oz Dried Orange Peel for 15 min 2oz crushed Coriander seed for 15 min 0.75oz Hallertau 4.8% AAU for last two min steep 11 Gallons total O.G. 1.053 |

Tasting: | Bottled 8/23/98 noticeably warm (5% Alc/Vol) Coriander lends the nice warm and citrus flavor expected. Looking foward to its maturation. Hops are very much in the background. Light bodied (thanks to the honey). Previous variations on this recipe have been favorites of friends all around. |
