Xmas Ale

Originally from the Cat's Meow, second year I've brewed this and it's come out really well.

Beer: Xmas Ale Style: American Pale Ale
Type: Extract w/grain Size: 10 gallons
Color:
48 HCU (~21 SRM)
Bitterness: 104 IBU
OG: 1.050 FG: 1.010
Alcohol: 5.1% v/v (4.0% w/w)
Grain: 1.39 lb. American crystal 40L
0.69 lb. Roasted barley
5.6 oz. Flaked barley
Steep: Placed grains in a large nylon bag.
Put into water when cold and removed when the water reached 160°. Used
a slow increase of heat, took 45 minutes or so to bring water to 160°. Used
about 1 gallon of 170° water to rinse/sparge grains.
Boil: 60 minutes SG 1.100 5 gallons
11.8 lb. Light malt extract
0.69 lb. Brown sugar
1/2 cinnamon stick
1 tsp whole clove

Added the brown sugar, cinnamon and cloves at the 15 minute (left) point with the finishing hops.
Hops: 8.83 oz. Northern Brewer (8.5% AA, 60 min.)
3.53 oz. Cascade (6% AA, 15 min.)
Yeast: Used Edme dry yeast.
