Potpourri Pale Ale

This is a kitchen-sink beer, brewed after getting a bunch of
new grain and while trying to get rid of the last of a cache of
hops.

Type: All grain Size: 5.0 gallons
Color:
11 HCU (~8 SRM)
Bitterness: 57 IBU
OG: 1.056 FG: 1.012
Alcohol: 5.7% v/v (4.5% w/w)
Water: 1 tsp gypsum + 1/2 tsp Burton salts to mash.
Grain: 4 lb. American 2-row
4 lb. Belgian pale
1 lb. Belgian Pilsner
5 oz. Wheat malt
8 oz. Belgian Munich
8 oz. Belgian CaraPils
8 oz. British crystal 50-60L
Mash: 71% efficiency
Unknown, but it was early in my all-grain career so I probably
did a 20-minute protein rest, and a 60-minute saccharification
rest at about 156° F.
Boil: 90 minutes SG 1.043 6.5 gallons
Hops: 1 oz. Chinook (10.4% AA, 60 min.)
0.75 oz. Kent Goldings (5% AA, 20 min.)
0.75 oz. Cascade (6% AA, 15 min.)
0.5 oz. Saaz (3.75% AA, 10 min.)
0.75 oz. Kent Goldings (aroma)
Yeast: BrewTek Classic British Ale (which has become a personal
favorite).
Log: Dry-hopped with 1 oz Cascades for 7 days.
Brewed Winter/Spring 97.
Carbonation: 3/4 cup corn sugar priming.
Tasting: I thought the bitterness just a tad harsh, and would substitute
Centennial for some of the Chinook. I'd also drop the Pils,
substituting Pale Ale.

Judges comments:
Score: 38/43 (1st Place, 3rd Best of Show; Decatur/CIBA)
Nice and fruity; needs more hop aroma; good head and color; nice
maltiness.

Score: 37/40 (3rd Place; BOSS?)
Overconditioned; clean spicy hop aroma; good hop flavor
and bitterness; "Great beer! Send me a few."
