Hop Harvest American Pale Ale

Harvesting Cascade hops just before sundown and brewing Am. Pale Ale on a warm July evening adding 5 ounces of wet hops to the boil at knock out.

Alcohol: 5.5% v/v (4.3% w/w)
Water: 1/3 distilled with 2/3 untreated well water. 1/2 tsp of gypsum
Grain: 6 lb. British pale
3.5 lb. German Pilsner
1 lb. Wheat malt
1.25 oz. American crystal 40L
Mash: 75% efficiency
90 min @ 151°F
Boil: 60 minutes SG 1.042 7.25 gallons
no Irish Moss
Hops: 1 oz. Centennial (10.7% AA, 60 min.)
1 oz. Cascade (7.2% AA, 20 min.)
2 oz. Cascade (7.2% AA, 5 min.)
5 oz. Fresh (wet) hops (aroma)
Yeast: Fermentis US-56 (Chico)
Log: Brewed July 24th 2006
Fermentation temps controlled using ice bath around 6 gal glass carboy.
Carbonation: 10 psi
