Grain: | 1 lb. American 6-row .25 lb. American crystal 80L |

Steep: | Steep until fast simmer (yes simmer!) Then, remove grains and squeeze to get that goodness! |

Boil: | 60 minutes | SG 1.102 | 3 gallons | |||||
6.6 lb. Light malt extract 1 lb. Light dry malt extract |

Remove from heat and stir in extracts to avoid scorching. Also, add bittering hops and proceed to follow hop schedule during 60 minute boil. No hop bags were used in this boil! 1/2 tsp Irish Moss after 45min. After 60 minutes I plunged the kettle in and ice bath to cool the wort. Next, strain wort as it is transferred to the fermenter, pouring 1/2 gal of hot water through strainer (sort of like a sparge.) Then add cold water to 5 gallons. |

Hops: | 1 oz. Chinook (12% AA, 60 min.) 1 oz. Cascade (6% AA, 45 min.) 1 oz. Cascade (6% AA, 30 min.) 1 oz. Cascade (6% AA, 15 min.) 2 oz. Cascade (aroma) |

Yeast: | Wyeast #1056 California Ale. Liquid yeast, no starter! | |||||||
Log: | After 9 days X-fer to the secondary, adding 2oz (yes, 2) of Cascade Hops in a hop bag. Looked and smelled quite nice at this point. Bottled after 9 more days |

Carbonation: | 3.0 volumes | Dried Malt Extract: 10.0 oz. for 5 gallons @ 70°F | ||||||
This may have been a bit too much to prime but it made some of the bottles pop like champagne. Nice head though, no overflow |

Tasting: | MMM!!!!!!MMMMM!!!!MMMM!!!!! This beer is yummy. like fresh hops. Using Cascade really allowed this "bitter" beer to be quite mild and not biting to the taste. |
