Water: 3 tsp gypsum and 1/2 tsp Magnesium Sulfate in 7 gallons of water, boil 20 min to dissolve minerals and remove chlorine, decant from sediment when cool.
Grain: 6.3 lb. British pale
1.2 lb. British crystal 50-60L
1.3 oz. British black patent
Mash: 67% efficiency
90 min, single infusion, 151°F
Boil: 90 minutes SG 1.038 5.5 gallons
6.4 oz. Cane sugar
Irish moss @75 min
Hops: 1 oz. Kent Goldings (5% AA, 60 min.)
.25 oz. Kent Goldings (5% AA, 30 min.)
.25 oz. Kent Goldings (5% AA, 15 min.)

Yeast: Wyeast 1728 Scottish Ale, pint starter started 24 hours before pitching.
