Solstice Strong Ale

Type: Extract w/grain Size: 5 gallons
Color:
70 HCU (~27 SRM)
Bitterness: 29 IBU
OG: 1.079 FG: 1.019
Alcohol: 7.8% v/v (6.1% w/w)
Grain: 1.5 lb. American crystal 20L
.25 lb. Roasted barley
Steep: Steep grains for 30 minutes in 2.5 gallons of 150 F water.
Boil: 60 minutes SG 1.159 2.5 gallons
3 lb. Light malt extract
4 lb. Amber malt extract
3 lb. Dark malt extract
Next time, just one type of extract can be used. Probably amber. And don't forget the Irish Moss!!!
Hops: 2 oz. Target (10% AA, 60 min.)
Yeast: White Labs Edinburgh Ale Yeast. 1 pint starter. In future, a larger starter should be used as this was slow to begin fermenting.
Log: 1 week primary 67 F. 12 days secondary at 45 F. 1 week at 67 F. Added one packet of gelatin in water to the secondary.
Carbonation: 4 oz corn sugar
Tasting: VERY hoppy at bottling. Not unpleasant, but strong. Also, the color is not quite as dark as shown on the page. Outstanding flavor after 6 weeks in the bottle. Hops ahve subsided, and it is incredibly malty with an amazing head. Good stuff, but too much can do you in.
