Doggie Dubh Wee Heavy

This Wee Heavy Ale is basically my Scottish Ale on steroids. The large amount of malt extract used results in a high alcohol content and big, malty flavors, balanced by the hops.

Type: Extract w/grain Size: 5 gallons
Color:
79 HCU (~30 SRM)
Bitterness: 26 IBU
OG: 1.094 FG: 1.020
Alcohol: 9.5% v/v (7.5% w/w)
Grain: 1 lb. American crystal 60L
4 oz. American chocolate
2 oz. Roasted barley
Steep: Steep the grains in a grain bag in two gallons of water for 20 minutes at 160°. Pour the brown sugar into a quart of water and carmalize it by boiling it in a large, flat pan for 20 minutes.
Boil: 60 minutes SG 1.117 4 gallons
3 lb. Light dry malt extract
6 lb. Amber dry malt extract
1 lb. Brown sugar
Hops: 1 oz. Fuggles (4.75% AA, 60 min.)
1 oz. Northern Brewer (8.5% AA, 30 min.)
1 oz. Fuggles (4.75% AA, 15 min.)
Yeast: White Labs Liquid Yeast WLP028 (Edinburgh Ale Yeast) in a one quart starter.
Log: After the grains have been steeped, pour the results into the brewpot, bring it to a boil, and add the DME and brown sugar. Top it off to 4 gallons. Start the timer when it starts boiling again and boil for 60 minutes.

Ferment this beer at a lower temperature for a longer period of time to avoid getting any fruit flavors from a fast carbonation.

After two weeks rack it to the secondary fermenter and add a grain bag with 1 - 2 oz of French oak chips, which have been soaked for a week in single malt Scotch. Leave it in the secondary for at least one week.
Carbonation: 2.0 volumes Corn Sugar: 2.94 oz. for 5 gallons @ 65°F
Carbonate with 2/3's of a cup of brown sugar.

After carbonation, refrigerate the beer for at least two weeks to condition it.
