Pre-Prohibition Pilsner

This is one of the cleanest tasting, most "in sytle" homebrews that
our brew group has ever created. Enjoy making this brew that
no one but the lucky homebrewer can create! Use a good domestic 6-row
malt (Great Western is what is local here in the North West), and good
German hops if you can find them. Corn dilutes the excessive protien
levels, but don't exceed 20% of grist volume. Use the steam yeast to
stay in style, and in the 50's F, the beer stays very clean (no esters).

Bitterness: 22 IBU
OG: 1.053 FG: 1.014
Alcohol: 5.0% v/v (3.9% w/w)
Water: Water is soft (less than 50 ppm TDS) and filtered on a
tap style fitler. No salts were used.
Grain: 35. lb. American 6-row
6 lb. Flaked corn
Mash: 72% efficiency
We mashed using a combination of boiling water infusions
and pulling decoctions to boost temp rests. Decotions were boiled for
less than one minute to minimize tannin extraction from husks.
30 min at 48C
45 min at 60C
45 min at 68C
mash out at 77C
Boil: 75 minutes SG 1.048 22 gallons
Hops: 4 oz. Hallertauer Hersbrucker (5.8% AA, 60 min.)
1 oz. Crystal (3.5% AA, 15 min.)
1 oz. Crystal (aroma)
Yeast: We used a two gallon yeast starter with White Labs Steam Lager Yeast
Log: Brewed 2/6/99
Ferment temp: 50-55 F
Racked after two weeks
Lagered at 35 F
Herbsrucker Hops are from Oregon State Univ. Reasearch Hop Farm
and are available from corvallis brewing supply. Hops are unsurpassed in
feshness and quality. Many other varieties are available.

Carbonation: Force carbonated to 2.5 volumes
Tasting: Beer is clean, dry, and bright with an excellent head. Hop bittness balances
slight sweetness from the corn. Hop aroma is slight, and the malt is at
forefront. Beer is refreshing, and get at least 2.5 volumes of CO2 or
flat beer will seem overly sweet and lifeless. We are very pleased with
our effort.
