Type: Extract w/grain Size: 5.0 gallons

5 HCU (~5 SRM)
Bitterness: 10 IBU
OG: 1.037 FG: 1.007
Alcohol: 3.9% v/v (3.1% w/w)
Grain: 4 oz. American crystal 10L
Steep: Steep grains in grain bag until water behins to boil.
Boil: 60 minutes SG 1.074 2.5 gallons
3.3 lb. light malt extract
1 lb. Rice extract
Add Irish Moss last 15 minutes of boil.
Hops: .5 oz. Hallertauer (4.25% AA, 60 min.)
.25 oz. Hallertauer (4.25% AA, 30 min.)
.25 oz. Hallertauer (4.25% AA, 15 min.)
Yeast: Try White Labs new Mexican Lager yeast; Wyeast 2007 or 2035 would be good, too.
Log: Brewed in May '01. Bottled half of the batch and put the other half in a "Party Pig" [the poor man's kegging system]. The difference between the bottled half and the "kegged" half was very marked - the "kegged" half was great - clear, nice head retention for style, clean flavor. Good summer beer. Only change would be to increase the IBU, particular at finishing. Used the WL Mexican Lager w/starter with great results.
Carbonation: Prime bottles with 4.5oz corn sugar
