An attempt at a fall Oktoberfest brewed with an Ale Yeast

Color:
16 HCU (~10 SRM)
Bitterness: 26 IBU
OG: 1.055 FG: 1.012
Alcohol: 5.5% v/v (4.3% w/w)
Water: Reverse Osmosis water used for all applications. 3 gallons chilled for top-off.
Grain: 1 lb. Belgian CaraVienne
Steep: Steeping grains added at room temperature. Brought to boil and removed.
Boil: 60 minutes SG 1.091 3 gallons
7 lb. Light malt extract
Whirlfloc added at 15 minutes.
Hops: 1 oz. Perle (8% AA, 60 min.)
0.5 oz. Spalt (4.5% AA, 30 min.)
0.5 oz. Spalt (4.5% AA, 15 min.)
Yeast: WLP029 with a 2-liter starter. Refrigerated and decanted.
