Chucktoberfest-ale

This looked pretty good on paper. I do not have lager capabilities,
yet. Hopefully the yeast strain is as advertised and I'll get close to a lager-tasting-ale.

Type: All grain Size: 5.5 gallons
Color:
8 HCU (~6 SRM)
Bitterness: 21 IBU
OG: 1.056 FG: 1.014
Alcohol: 5.4% v/v (4.2% w/w)
Water: 1tsp gypsum in strike water
Grain: 7 lb. American 2-row
2 lb. American Munich
4 lb. German Vienna
Mash: 65% efficiency
I plan on doing a straight infusion mash at about 152-154F. With this much grain should be a pretty full bodied beer no matter what temp I mash at.
Boil: 60 minutes SG 1.044 7 gallons
Add one oz tettnanger at start of boil, then another oz at about 20-15 minutes before shutting it down, along with some irish moss.
Hops: 1 oz. Tettnanger (4.25% AA, 60 min.)
1 oz. Hallertauer (4.0% AA, 15 min.)
Yeast: Wyeast 1056. They say it's lager-tasting-like. I'll give it a shot.
Log: Will brew on or about the 1st of September, 2003.
Carbonation: 2.7 volumes Keg: 11.7 psi @ 35°F
Force Carb at about 12 lbs at 35F. I Plan to do this at the end of september, right before a camping trip.
