Alcohol: 5.8% v/v (4.6% w/w)
Water: RO water preferred
1/2 tsp gypsum recommended
Boil: 30 minutes SG 1.051 3.5 gallons
3.3 lb. White Sorghum extract
16 oz. Belgian candi sugar
12 oz. Buckwheat Honey
.5 lb. Maltodextrin
1 tsp Irish Moss last 15 mins of the boil
Add the zest of 1 Grapefruit remaining 5 mins of the boil
Hops: 0.125 oz. Mosaic (12% AA, 30 min.)
0.125 oz. Mosaic (12% AA, 15 min.)
0.25 oz. Mosaic (12% AA, 5 min.)
.5 oz. Mosaic (dry hop) (aroma)
Yeast: WB-06
1 tsp beer yeast nutrient
Ferment at 66°
(Alernate US-05 American Ale Yeast, Dry)
Log: 5-7 days in Primary
Rack to Secondary
Dry hop with the .5 oz of Mosaic hops (aroma) in the secondary
Carbonation: 3.6 volumes Keg: 22.7 psi @ 38°F
Prior to kegging mix with 3 gallons of grapefruit juice or grapefruit soda
