Easy German Hefeweizen

This was an easy & inexpensive batch to brew, came quite close to a Paulaner Hefeweizen.

Type: Extract w/grain Size: 5 gallons
Color:
5 HCU (~4 SRM)
Bitterness: 12 IBU
OG: 1.055 FG: 1.014
Alcohol: 5.2% v/v (4.1% w/w)
Water: Pur filtered water.
Grain: 8 oz. American crystal 20L
8 oz. Dextrine malt (Cara-Pils)
Boil: 60 minutes SG 1.078 3.5 gallons
7 lb. Wheat extract
Hops: 1 oz. Tettnanger (4.5% AA, 60 min.)
Yeast: White Labs WLP300 Hefeweizen.
Log: Boiled 9/4/2005, racked 9/10/2005, bottled 9/18/2005.
Carbonation: Primed with 3/4 cup corn sugar. Carbonated well, but after 3 months in the bottle, foamed quite a bit when pouring.
Tasting: Not much banana/clove nose, but bubblegum flavor is definitely in there. Fermented around 75, may go even warmer next time to see if that brings out more banana.
