Humpin' My Honey Wheat

To be kegged and chilled after one week... This will assure that the fermentation of the honey will be at a minimum( especially the slow fermenting fructose). This should leave some residual honey sweetness without producing the off flavors associated with honey fermentation.

Type: All grain Size: 11 gallons
Color:
3 HCU (~3 SRM)
Bitterness: 11 IBU
OG: 1.061 FG: 1.016
Alcohol: 5.9% v/v (4.6% w/w)
Water: Good old Detroit area tap water.
Grain: 12 lb. German Pilsner
7 lb. Wheat malt
Mash: 82% efficiency
Protein rest at 128°F for 15 mins
Raise to 154°F for 30 mins
Boil: 60 minutes SG 1.052 13 gallons
2 lb. Honey
Raw unprocessed Michigan Honey added 30 minutes into the boil
Hops: 1.5 oz. Willamette (5% AA, 60 min.)
Yeast: WLP300 Hefeweizen Ale Yeast
Log: Brew date - July 10
Trub bleed off - July 14
Keg and chill - July 17
Carbonation: 4.2 volumes Keg: 28.9 psi @ 38°F
