I use all maris otter for the base malt. Mash at 152 double batch sparge with 7 gallons total runoff. Should be right about 1.038 at start of boil.
Boil: | 90 minutes | SG 1.034 | 7 gallons
to get a good caramel note I boil the original 7 gallons vigourously for 30 minutes, take a gravity reading and adjust with spring water to get back to my starting gravity of 1.038. Then I will bring back to a boil and boil for 60 minutes a little less vigorously. Whirlfloc and yeast nutrient added at 15 minutes.
Hops: | 1.5 oz. Kent Goldings (5% AA, 60 min.) .5 oz. Kent Goldings (5% AA, 15 min.) |

Yeast: | Any english ale yeast will work but I like Yorkshire Bitter yeast from Wyeast. Ferment at 67F, not too cold, you want some esters in this beer.
Carbonation: | carbonate on the low end at 1.75 to 2.0 volumes of CO2 |
