Apricott Honey Ale

Flavored with apricot, this beer makes a crisp, tangy summertime beer which is best served icy cold after about 6 months of aging. (it's favorite with the ladies!)

Beer: Apricott Honey Ale Style: American Wheat
Type: Extract Size: 5.5 gallons
Color:
2 HCU (~2 SRM)
Bitterness: 32 IBU
OG: 1.046 FG: 1.004
Alcohol: 5.5% v/v (4.3% w/w)
Water: 10 minutes boil to dechlorinate
Boil: 60 minutes SG 1.046 5.5 gallons
2kg Wheat extract
1kg Honey
30 grams of grated dried orange peel added at minute 1
1 heaping teaspoon of Irish moss at minute 40 of boil
1 litre of essence of apricot along with 1 kg of honey at minute 59 of boil
Hops: .5 oz. Chinook (12% AA, 60 min.)
.5 oz. Cascade (5.6% AA, 45 min.)
.5 oz. Cascade (5.6% AA, 15 min.)
Yeast: Nottingham yeast from a standard 24 hour starter of extract, honey, and dextrose.
Log: The IBU's might be a little high for some, but I like to age it for 6 months before drinking, so the extra hops help. The higher alpha acid content makes a much better longer lasting head as well.
Carbonation: 2.7 volumes Corn Sugar: 5.43 oz. for 5.5 gallons @ 20°C
make a bottling syrup by adding corn sugar to 200 millilitres of water and rack to mix.
