Sunshine Wheat Clone
This is a light Belgian style Wheat beer brewed with a mix of barley and wheat malts. The finish is slightly spicy and refreshing. The small addition of dextrine malt adds some extra body to this excellent thirst quencher

Single infusion rest at 150 for 1 hour in 2 1/2 gallons Sparge to yield 6 gallons of wort. | ||||||||

Hops: | 1.25 oz. Saaz (3.75% AA, 60 min.) .25 oz. Saaz (aroma) .25 oz. Coriander (aroma) .5 oz. Bitter Orange Peel (aroma) |

Yeast: | Fermented with Belgian Wheat ale yeast | |||||||
Log: | Primary ferment with yeast at 60-65F for 5 days. Rack and condition at 60F for 5 more days with gelatin finings. | |||||||
Carbonation: | Bottle condition with 3/4 cup corn sugar.Condition for 1 1/2 weeks at room temp then cool down to 60F and condition additional week before serving. | |||||||
Tasting: | Good clean appearance with fruity nose and wheaty flavor. Orange peel and coriander along with hop presence make for a slight spice in the finish. Great quencher, similar to the Sunshine Wheat of New Belgium, but better because it is not filtered and it is better because of the bottle conditioned flavor. |
