Acid rest - Add 9 qt. 105 deg water to get 95 deg - 30 min Protein rest - Add 3 qt boiling water and adjust to 124 deg - 30 min. Sac. rest - Add 1.5 qt boiling water and adjust to 150 deg - 15 min Raise to 158 deg - 15 min. Mash out - raise to 168 deg and sparge with 168 deg water to get 6.5 gallons. |

Log: | 2 stage fermentation. Add 1/2 pack gelatine (Knox) dissolved in 1/2 pint warm water at racking into second stage. | |||||||
Carbonation: | Add 1 1/4 cup dry malt extract dissolved in boiling water at bottling. |
