Uberon (Oberon Clone)

I actually received this recipe from a friend of a friend. I like Oberon so I thought I would give this a try.
I shopped for malts and ended up with United Canadian Pale and Wheat which is actually a blend. Actual quantities used were 6 lbs of the wheat blend and 3 lbs of the pale.

Type: Extract w/grain Size: 5 gallons
Color:
11 HCU (~8 SRM)
Bitterness: 12 IBU
OG: 1.069 FG: 1.015
Alcohol: 6.9% v/v (5.4% w/w)
Water: Got bottled water from the grocery store. They have a Culligan machine where a 3 gallon refill costs 87 cents, so it's quite economical for brew water.
Grain: 0.25 lb. Dextrine malt (Cara-Pils)
0.5 lb. Belgian CaraVienne
Steep: Put into pot with 2 ½ Qts. Water (no grain bag):
¼ lb. Breiss Dextrin Malt *
½ lb. DeWolf Caravienne Malt *
Raise temp to 150° and hold for 10 minutes.
Raise temp to 158° and hold for another 10 minutes.

*These grains didn't really need to be mashed, but I wanted to test out the process.

When done steeping, I just poured the mix through a strainer into the brewpot and sparged the grain with hot water from yet another pot. Seemed to work great...this is how I will be steeping from now on.
Boil: 60 minutes SG 1.172 2 gallons
6 lb. Light malt extract
3 lb. Wheat extract
Dissolve 6 lbs. United Canadian Wheat and 3 lbs. United Canadian Pale malt extracts.
Bring to a boil after adding more water.
For hops I found a 2 oz bag of the Hallertauer full leaf so I thought I would try that. The rest of the hops were pellet.
Hops: 1 oz. Hallertauer - pellets (2.1% AA, 60 min.)
1 oz. Hallertauer - full leaf (4.5% AA, 60 min.)
0.5 oz. Hallertauer - full leaf (4.5% AA, 30 min.)
0.5 oz. Hallertauer - full leaf (4.5% AA, 20 min.)
0.5 oz. Czech Saaz - pellets (3.5% AA, 10 min.)
0.5 oz. Czech Saaz - pellets (aroma)
Yeast: wyeast #1056 - no starter.
Captured yeast from secondary for later use.
Log: Notice a large amount of sludge at bottom of fementor and settling out of wort. This would be a good candidate for racking to a secondary in a few days, but I’ll be out of town this week.
Racked to secondary after about 8 or 9 days. Left in secondary about a week, then bottled.

I don't have a hygrometer, so BG and FG are bogus default values, as are the values derived. The color is a little darker than that shown by the SRM indicator.
Carbonation: Wanted a little more foam, so I used about 7/8 cup of corn sugar, boiled with some water and added to the beer in the bottling bucket.
Tasting: Great stuff after 1 1/2 weeks in the bottle! I don't have a bottle of Oberon as it is the off-season for that, but from memory, this recipe is real close. www.bellsbeer.com
