JP's Heiney Weiss

Honey Wheat beer recipes seem to be a dime a dozen, but, as a homebrewer I can't leave well-enough alone. Here's my shot at making something similar to Leinie's Honey Weiss. It's named after my brother-in-law.

Beer: JP's Heiney Weiss Style: American Wheat
Type: Extract Size: 5 gallons
Color:
3 HCU (~3 SRM)
Bitterness: 14 IBU
OG: 1.048 FG: 1.004
Alcohol: 5.7% v/v (4.5% w/w)
Water: Our water here in Marquette, MI is soft water right from Lake Superior, lightly chlorinated. As far as tap water goes, it's the best water I've ever tasted.
Boil: 75 minutes SG 1.060 4 gallons
1.5 lb. Light dry malt extract
3 lb. Wheat extract
1.5 lb. Honey
I tossed in a teaspoon of Irish Moss with 15 min. left in the boil. The Clover Honey was pasteurized at 160蚌, then added to the brew bucket, and the wort was poured on top of that, then the bucket was topped off to 5 gallons. I think that made the OG a little higher than what the Recipator predicted it would be, as I ended up with an OG of 1.053.
Hops: 0.75 oz. Kent Goldings (4.5% AA, 60 min.)
0.50 oz. Kent Goldings (4.5% AA, 15 min.)
Yeast: Two Packets of Munton's dry ale yeast, rehydrated. Wort was cooled to 70蚌 before pitching the yeast.
Log: Brewed on May 22, 2005.
Racked on May 26, 2005. Gravity at racking was 1.016.
Carbonation: I plan to prime it with 1 cup of corn sugar.
Tasting: I'll let you know in a few weeks.
