Add extract when temperature reaches 185°F and sustain a rolling boil for 2-3 minutes. Add honey at last 15 minutes.
Hops: 70g Hallertauer Hersbrucker (1.5% AA, 60 min.)
29.2g Amarillo (8.2% AA, 15 min.)
Yeast: Notthingham
Log: Brewed 1/01/10: Total brew time: 2 hours
Primary 7 days @ 62°.
Secondary 14 days @ 62°. At secondary add spices to secondary (1 stick cinnamon, 1/8 tsp ground clove, 1/4 tsp nutmeg, 1 split vanilla bean).
Carbonation: 2.5 volumes Keg: 14.9 psi @ 45°F
