" Twiggy Ale "
This "Twiggy Ale " was the result of an indecision between making an IPA or a
Honey Larger so they were combined. The Twiggy taste is generaged from the
"Leatherwood" Honey from Tasmainia in Australia (Down Under). The Honey adds
a wooded taste to the light Ale. A note of warning, Dont be too generous with
the Honey as it can be a very strong taste. Cheers !

1.8kg Light malt extract 500g Honey - Australian "Leatherwood" 200g Corn sugar 1kg Light dry malt extract |

Toast 200 grams of cracked Amber grains on a tray in the overn at 180C for 15-20 minutes. Add toasted amber grains and 200 grams cracked Crystal Malt grains in pot and Boil for 20 minutes. Remove grains and add malt extract and 800 grams of dried malt with dextrose (corn Sugar) and 2 litres of water in a pot. Add 25 grams Cascade hops and boil for 60 minutes. Add 10 grams Cascade hop pellets in last 10 mins of boil. Add 2 packs of Ale yeast when wort cooled. |

Log: | Primary fermentation 5-8 days, Rack for another 5-8 days to your convenience, Bottling- Bulk Prime your beer- boil up 200 grams of dry light powdered malt in 1 litre of water. Allow to cool and place in the bottom of your 'second' fermenter,syphone your beer into second fermenter, Now bottle your beer ! |

Tasting: | It should be very light in hop and dry in taste. If you add too much leatherwood honey it can be like sucking on a gum tree....a long story....Cheers ! |
