ACID REST: Mash in at 35°C to 41°C with 6 liters of water, and rest for 2-3 hours; PROTEIN REST: Raise temp. to 56°C, and rest 30'; SACCHARIFICATION: Mix in 2.75 liters water (100°C, and rest at 65.5°C for 60'; check with iodine for conversion; mash out at 77°C; sparge with 2.5~3 gal water (77°C); collect about 3.5 gal of runoff; top up to 6.5 gal; start boil. |
